Ingredients:

  • 1 large cauliflower head, chopped into florets
  • 3 cloves garlic, peeled
  • 1 large onion, chopped
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup unsweetened almond milk (or any milk of your choice)
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)
  • Fresh parsley or chives for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cauliflower florets, garlic cloves, and chopped onion with olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. Roast in the preheated oven for 25-30 minutes, until the cauliflower is golden brown and tender.
  4. Transfer the roasted vegetables to a large pot. Add the vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
  5. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the mixture to a blender in batches and blend until smooth.
  6. Stir in the almond milk and thyme, if using. Let it simmer for another 5 minutes. Adjust salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley or chives.
